Pumpkin pie may be a classic fall dessert, but Ree Drummond‘s delicious pumpkin scones perfectly capture the fall season. The Pioneer Woman star said her scone recipe makes a great Thanksgiving host gift, too.

Ree Drummond makes easy pumpkin scones for a host gift

Drummond demonstrated how to make her easy pumpkin scones recipe on an episode of The Pioneer Woman, noting it’s a “perfect host gift” that can be devoured the morning after Thanksgiving. “Welcome to the ranch, where I’m celebrating Thanksgiving with delicious dishes to take to holiday get-togethers,” she said at the top of the show.

“Thanksgiving time is one of my favorite times of year and it’s also a time of year that I’m always thinking, ‘What can I take to someone’s house for Thanksgiving?” Drummond explained. “Today I thought it would be fun to show you some of my favorite portable dishes that are perfect for turkey day.”

She loves the idea of bringing a gift for the host and her pumpkin scones are perfect. “I think one of the best ideas, when you’re invited to someone else’s house for Thanksgiving, is to take them a basket of delicious baked goods that they can enjoy the morning after the big feast,” The Pioneer Woman star said. “I’m going to fill this basket with something super tasty.”

How to make ‘The Pioneer Woman’ star’s scones

The pumpkin scone recipe is easy enough to make. Drummond combined flour, brown sugar, baking powder, and pumpkin pie spice. “I don’t think there’s a scone on earth that I don’t love, but there is something about pumpkin scones that really lights my fire, especially this time of year,” she explained.

The Pioneer Woman star added cold pieces of butter and used a pastry cutter to work the ingredients into coarse crumbs.

In another bowl, she whisked together pumpkin puree, heavy cream, and eggs. “Now this is not pumpkin pie filling, it’s pumpkin puree,” Drummond explained. “And sometimes those things are easily confused. Pumpkin pie filling has spices and everything in it so this is just the straight-up pumpkin because we already added the spices to the dry ingredients.”

She added the wet ingredients to the dry ingredients and stirred everything together lightly to avoid “tough” scones.

She makes and easy coffee flavored icing

Drummond placed the pumpkin scone dough on a board and formed it into a rectangle, then cut it into 12 equal triangular pieces. The Pioneer Woman star placed them on a parchment paper-lined baking sheet and brushed the tops with cream, then baked the scones in a 425 degree Fahrenheit oven for 20 to 23 minutes.

She let the scones cool before topping them with a delicious glaze. Drummond sifted powdered sugar into a bowl and added salt, strong brewed coffee, melted butter. She whisked the ingredients together until it formed a thick icing.

The Food Network host spooned the glaze on the scones and sprinkled pumpkin pie spice over each piece.
